Costa Digiano 2013 Extra Virgin Olive Oil - single variety MIGNOLA


2013 harvest notes:
After a cool and raining spring followed by a quite brief but hot summer early October and pre-harvest moved in with loads of more wet and cold weather. We prepped our rain coats and got ready for a chilly harvest, but luck would have it that in mid October the weather turned and we were blessed with 2 full weeks of gorgeous sunshine, allowing us to bring all the fruit home in 11 days and at perfect ripeness! Our harvest lasted from October 22nd to November 1st. As always olives were hand harvested into small crates and taken to the mill at the end of every day, where they were cold pressed within max 10 hours of harvest, guaranteeing the maximum expression of fruit character, highest quantity of polyphenols (therefore spicier and bolder oil) and longer shelf life. This year our harvest dream team was made up of myself and Mirco along with the priceless help of my mom Peg, brother Clay with his wife Jenny and our 2 new friends from Colorado Jeff and Ellen. 

We havested a total of 3100kg of olives for an oil production of a little over 400 liters of single variety Mignola extra virgin olive oil. 

Our Extra Virgin Olive Oil single varitey MIGNOLA is packaged in a 375ml Burgundy bottle and our label features an original work of art by my brother Will Tams. Each bottle of Costa Digiano MIGNOLA is hand numbered limited edition.
